How to Make Veg Biryani

Step 1: Wash and Soak the Rice

Wash the basmati rice gently until the water becomes relatively clear.

Soak the rice in water for around 20–30 minutes.

Soaking helps the grains cook more evenly and reduces the chance of breaking.

Step 2: Cook the Rice

Boil around 5 cups of water in a large pot.

Add bay leaf, cloves, cardamom, cinnamon, salt and a little oil.

Add the soaked rice and cook until the rice is around 70–80% cooked.

The grains should still have a slight bite because they will cook further during the final dum process.

Drain the rice and keep it aside.

Step 3: Prepare the Vegetable Masala

Heat oil or ghee in a heavy-bottom pan.

Add sliced onion and sauté until light golden.

Add ginger-garlic paste and green chilli. Cook for a minute.

Add chopped tomato and cook until soft.

Now add carrot, beans, peas, cauliflower and potato.

Add turmeric, red chilli powder, coriander powder, cumin powder, biryani masala and salt.

Mix everything well and cook for a few minutes.

Step 4: Add Curd

Lower the flame and add whisked curd.

Mix continuously so the curd blends properly with the masala.

Cook until the vegetables are partially cooked and the masala becomes thick and aromatic.

Add fresh mint and coriander leaves.

Step 5: Layer the Biryani

Take a heavy-bottom pot.

Add a layer of vegetable masala first.

Then add a layer of partially cooked rice.

Add some fried onions, mint leaves and coriander leaves.

Repeat the layers until the rice and vegetable masala are finished.

Top it with fried onions, mint, coriander, ghee and saffron milk if you are using it.

Step 6: Dum Cook the Biryani

Cover the pot tightly with a lid.

Cook on low flame for around 15–20 minutes.

Turn off the flame and let the biryani rest for another 5–10 minutes before opening the lid.

This resting time helps the flavours settle and allows the rice to absorb the aroma.

Step 7: Serve Hot

Gently fluff the biryani with a fork or flat spoon.

Serve hot with raita, onion salad, mint chutney or your favourite side dish.

Your restaurant-style Veg Biryani is ready to serve.

Tips for Perfect Veg Biryani

Use Good Quality Basmati Rice

Long-grain basmati rice gives the biryani its classic aroma and texture.

Don’t Fully Cook the Rice

The rice should be around 70–80% cooked before layering. Fully cooked rice can become soft during the dum process.

Don’t Add Too Much Water

Excess water can make the biryani mushy and reduce the separation between the rice grains.

Use Fresh Mint and Coriander

Fresh herbs make a noticeable difference in the final aroma and flavour.

Let the Biryani Rest

After cooking, allow the biryani to rest for a few minutes before opening the pot. This helps the flavours develop.

What to Serve with Veg Biryani?

Veg biryani tastes great with:

  • Boondi raita
  • Cucumber raita
  • Onion salad
  • Mint chutney
  • Plain curd
  • Papad
  • Pickle

For a complete meal, you can also pair it with a refreshing cold drink or dessert.

How to Make Veg Biryani More Flavorful

For a richer restaurant-style taste, use a combination of ghee, fried onions, mint, coriander and whole spices.

Saffron soaked in warm milk can also add a beautiful aroma and colour.

The key is balance. Too many spices can overpower the vegetables and rice, while too little seasoning can make the biryani taste flat.

Is Veg Biryani Easy to Make at Home?

Yes. Once you understand the three main stages — cooking the rice, preparing the vegetable masala and layering with dum cooking — making veg biryani becomes much easier.

The most important part is controlling the rice texture and cooking everything on low flame during the final stage.

Frequently Asked Questions

Can I make veg biryani without saffron?

Yes. Saffron is optional. Mint, coriander, whole spices and fried onions already provide plenty of aroma and flavour.

Which rice is best for veg biryani?

Long-grain basmati rice is generally the best choice for a fluffy biryani.

Can I use other vegetables?

Absolutely. You can add sweet corn, capsicum, mushrooms or other vegetables based on your preference.

Can I make veg biryani without curd?

Yes. Curd adds richness and tanginess, but you can make the masala without it by adjusting the spices and cooking process.
